Preparation Time: 10 minutes
Cooking Time: 30 minutes
Ingredients:
350g self-raising flour (use gluten-free if you are coeliac)
200ml warm water
2-3 tbsp olive oil
1 tsp of sea salt
5 cherry tomatoes
1 tsp of dry oregano or thyme
you can use any other fresh or dry herbs
you will also need a bit more oil and salt once the focaccia is ready

Preheat the oven at 190 degrees.
Add all dry ingredients into the bowl, including any herbs
Then add the water and oil
Mix it all together
Knead together – you may need to add more flour or water depending on the consistency. You are looking for something that doesn’t stick to your fingers but also isn’t too dry
Put a sheet of baking paper on a baking tray and place dough on top
Create a shape, depending on the baking tray, and then add chopped tomatoes, or thyme, and sprinkle sea salt.
Drizzle the olive oil over the top before putting it to the oven and baking for 30 minutes.
