Peanut Butter & Banana Truffles

These peanut butter and banana truffles are a great source of fibre, fats, and protein. And let me tell you something, healthy snacking doesn’t have to be expensive or unsatisfying. In fact, healthy snacking can be so much fun, as you combine flavours which you wouldn’t think of combining before.
Preparation Time: 5 minutes
Cooking Time: 1 hour in fridge (at least)
Ingredients:
1 cup of oats (blended into flour)
4 tbsp peanut butter (smooth one preferably)
1.5 tbsp of date nectar
2 tbsp of nut milk (I used coconut milk)
1 ripe banana (smaller one)
pinch of salt
Method:
Blend the oats until they look like flour
Then add the peanut butter with the date nectar and nut milk
Lastly, add the ripe banana and pinch of salt
Blend it all together until it’s a smooth mixture
If it’s too dry add a little bit more of the nut milk but don’t make it watery
Roll into the truffles and cover in raw cocoa powder and decorate with desiccated coconut
Leave it in the fridge to settle for at least a couple of hours before serving
