Pear, Frozen Berries & Dark Chocolate Oat Crumble

Oats is grain which is part of complex carbohydrates. It's a great source of soluble fibre and they can lower cholesterol levels and improve blood sugar control. This grain is great for our gut flora where approximately 70% of our immunity is stored, as well as 95% of serotonin (happy hormone).
Preparation Time: 10 minutes
Cooking Time: 35 minutes
Ingredients:
For the filling
6 pears (or apples)
1 cup of frozen berries
100g or dark chocolate chopped into pieces
2 tbsp of coconut sugar
1 tsp of cinnamon
For the topping:
125g of oats
1/2 cup of maple syrup or honey
2 tsp of melted coconut oil
A generous pinch of cinnamon
1/2 chopped nuts
(optional - I normally use walnuts)
Method:
Preheat the oven to 180 degrees Celsius.
Add the chopped pears and frozen berries to the bowl. Break the chocolate into squares and add the to the bowl with the cinnamon and coconut sugar.
Toss together, then tip the mix into a greased ovenproof dish. Sprinkle 3 tablespoons of cold water over the top.
Blitz half of the oats until you have a coarse flour. Rinse and dry the bowl and now make the crumble in it. Tip in oats, oat flour, maple syrup or honey, melted coconut oil, cinnamon and chopped nuts.
Mix everything together. Spread the crumble layer on top of the pears and berries mix and bake in the oven for 20-25 minutes until slightly golden on top.
