Shakshuka – Eggs in Tomato Sauce

This is such a quick recipe, either for breakfast or lunch. It’s a great source of Vitamin D, prebiotics, healthy fats, carbohydrates, and protein. Basically a recipe full of right nutrients which give your body perfect energy boost.
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Ingredients:
1 onion
2 cloves of garlic
2 tbsp olive oil
1/2 tsp harissa sauce
1 tin of chopped tomatoes
salt and pepper
4 eggs
parmesan cheese or feta
1 tsp tamari sauce
fresh parsley and marjoram
Method:
Pre-heat the oven on 175°C. Cut onion and fry on olive oil.
Then add harissa sauce and garlic.
Once it’s all golden, add tin of tomatoes, salt and pepper and tamari sauce.
Let it thicken up a little bit.
Then crack 4 eggs into the mix and put the pan into the oven and grill for 10-12 minutes.
Once it’s ready, garnish with fresh herbs. Served it with fresh veggies, halloumi, and toasted sourdough.
