Quick Pea and Mint Soup

Nutrition Tip:

Mint has one of the highest antioxidant capacities of any food. I am sure you all know that it’s great herb for digestion. If you struggle with bloating, mint tea is definitely one of the thing which you should consider, as it eases the pain (I talk from my own experience).

Preparation Time: 5 minutes

Cooking Time: 5 minutes


Ingredients:

  • 250 ml water

  • ½ avocado, peeled

  • 300 g frozen peas

  • 2 handfuls spinach leaves

  • 1 tbsp lemon juice

  • 1-2 tbsp chopped fresh mint

  • salt and pepper (depends on what is your taste)

  • 1 clove of garlic

Method:

  1. Blend it all and warm it up and serve with linseed or whatever else you fancy.
