Vegan Green Lentil Bolognese Sauce

Green lentils are one of the complex carbohydrates, they are full of fibre, folate, magnesium and contain beneficial fats. Also, remember fibre is able to support the reduction of cholesterol in your body. Tip from me: If you want a quick dinner, then buy green lentils in tin, It’s the quickest thing ever :).
Preparation Time: 10 minutes
Cooking Time: 40 minutes
Ingredients:
2 grated carrots
1 tin green lentils
1 tin chickpeas
1/2 chopped courgette
1.5 tbsp tomato puree
1 tin chopped tomatoes
1/2 box tomato passata
3 cloves of garlic (pressed)
salt & pepper
1 tsp wild garlic
1 tsp dry parsley
1/2 fresh red chili
2 tbsp soy sauce
1 tsp dry paprika
500 ml water
whole wheat pasta of your choice
Method:
Add all the ingredients except of pasta into the large saucepan, cover in water and firstly cook on the high heat for about 10 minutes.
Then on a lower heat cook the sauce for the next 20 minutes.
Whilst your sauce is cooking, use the last 10-15 minutes for cooking the pasta (follow the instruction on the packet).
Once it’s all done, serve with the fresh coriander or any other fresh herb you have available.
