Vegan Plum & Banana Cake

This vegan plum and banana cake is a great healthy treat if you fancy something sweet. As it contains banana and plums, it’s a great source of potassium and Vitamin C and of course my favourite word fibre. Fibre plays such a big role in our diet, therefore include fruit into your baking creations.
Preparation Time: 10 minutes
Cooking Time: 30-35 minutes
Ingredients:
1/2 cup of coconut oil (melted)
1/2 cup of coconut sugar
1 cup of gluten free raising flour
2 1/2 tsp of baking powder
1/2 cup of coconut milk
1 ripe banana
4-5 plums (halved with seed removed)
Method:
Preheat the oven to 170°C and grease and line a 8-inch round cake tin with grease proof paper.
Add the melted coconut oil, coconut sugar and mashed banana into the bowl and mix it all, so it’s nice and creamy. About 1-2 minutes.
Sift in the flour and baking powder and gently mix in until it’s just incorporated. Add in the coconut milk and mix again to combine.
Pour cake batter into the prepared tin and arrange the plum halves around the cake, gently pushing each one in.
Bake in the preheated oven for 30-35 minutes or until the top is golden and a knife inserted into the middle comes out clean. Leave to cool completely in the tin before serving.
TOP TIP: If you have too many types of fruit, freeze it and use it for a cake baking or a smoothie. I used my frozen plums for this cake :).
